$25-$40G's A few tables, chairs, used ovens, counter tops, industrial freezer etc, kitchen counters, stock and a sign for the roof of the car.

My old buddy owned a few, rent of course was biggest expense but the setup is cheap. In terms of stock if they used a good cheese, that was the highest cost in terms of buying. A lot of crazy stuff (criminal) goes on for a good mutzarella.
